Forget the napkins and start BBQ season off right with these delicious, savory and fall off the bone beef ribs! This recipe is sized to serve 4 and requires the use of a grill or smoker that allows you to monitor temperature for a consistent heat.

Ingredients
4 lbs beef back ribs
4 Tbs Brookshire’s Rack Rub BBQ Seasoning
3 Tbs vegetable oil
2 Tbs Worcestershire sauce
1 cup apple cider vinegar, for basting
barbecue sauce, for serving

Directions
  1. Place ribs on a baking sheet.
  2. In a bowl, combine the seasoning and oil.
  3. Rub the ribs on both sides with the mixture.
  4. Brush the ribs with Worcestershire sauce.
  5. If the ribs came in a slab, cut into 2 to 3 rib sections.
  6. Clean the grill surface.
  7. Heat grill to high. Set up for indirect heat by repositioning coals to one side or turning half of the burners to low.
  8. Spray the grill with nonstick spray in the area where you will place the ribs.
  9. Place ribs on grill, meat-side up.
  10. Close the grill and monitor the inside grill temperature around 250° F.
  11. Cook for 2 hours.
  12. After 1 hour, baste the ribs with vinegar.
  13. After 2 hours, baste again.
  14. Wrap the ribs in foil.
  15. Return to grill for 1 more hour.
  16. Check the ribs for doneness.
  17. The meat should be tender, and bones should give a little when pulled (between 190° F and 200° F when instant-read thermometer is inserted into meat).
  18. Baste again, and rewrap in foil.
  19. Let rest in a cold oven for 30 minutes to 1 hour.
  20. Serve with barbecue sauce.
